01FLOAT TEST
Float Test Fails
What you’re seeing: Your starter sinks even though it is bubbly or rising well.
The float test measures whether a sample traps enough gas to float; it is not a complete measure of starter strength. Use rise, aroma, bubbles and repeatable activity together.

Starter Not Rising
What you’re seeing: Your starter bubbles but barely climbs the jar after feeding.
Temperature, timing, hydration, flour and feeding routine can all change visible rise. Mark the jar after feeding and track the entire rise-and-fall cycle.

Liquid or Hooch on Top
What you’re seeing: A gray, tan, brown or dark liquid layer appears on your starter.
Hooch commonly appears when a starter has fermented for a long time and is running low on food. Check for normal fermentation versus visible contamination, then return it to a consistent feeding routine.

04ACETONE
Starter Smells Like Acetone
What you’re seeing: Your jar smells sharp, solvent-like or similar to nail-polish remover.
A strong acetone-like aroma often shows up when a starter has fermented a long time between feedings. Look at feeding timing, temperature and overall activity before assuming the culture is ruined.

05ROSE & FELL
Starter Rose Then Fell
What you’re seeing: Your starter climbed quickly, peaked and collapsed before you expected.
A rise followed by a fall is part of the fermentation cycle. The useful question is how quickly it peaks, how consistently it repeats that pattern and whether your feeding schedule matches its activity.

06NO BUBBLES
Starter Not Bubbling
What you’re seeing: You see little or no obvious fermentation activity after feeding.
Cool temperatures, a young or weakened culture, timing and feeding changes can all make activity hard to see. Check the sides of the jar as well as the surface and track changes over several feedings.

07MOLD
Pink, Orange or Fuzzy Growth
What you’re seeing: You see unusual colored streaks, spots or fuzzy growth.
Visible mold or suspicious pink/orange contamination is different from normal hooch or harmless-looking fermentation changes. When obvious mold is present, discard the starter rather than trying to rescue it.

What you’re seeing: Your starter pours like batter, separates quickly or will not hold structure.
Consistency depends on flour and hydration as well as fermentation. Measure flour and water consistently and avoid changing several variables at once while troubleshooting.

There is no single clock that fits every kitchen. A useful schedule follows your starter's activity, temperature and storage method rather than forcing every jar into the same timetable.

11FALSE RISE
The Day-2 False Rise
What you’re seeing: A new starter rose dramatically, then seemed to go quiet for days.
Early microbial activity can produce a dramatic temporary rise before a new starter develops a more stable fermentation pattern. A quiet period after an early burst does not automatically mean the starter died.

What you’re seeing: You want a better readiness check than dropping starter into water.
Look for repeatable expansion after feeding, bubbles throughout the jar, a healthy fermented aroma and a predictable peak. Readiness is a pattern, not one spoonful of starter in water.

Reviving Starter From the Fridge
What you’re seeing: Your refrigerated starter is flat, separated or strongly fermented after a long rest.
Cold storage slows fermentation but does not necessarily stop it. Inspect for contamination, then use consistent room-temperature feedings and watch for returning activity before baking.

What you’re seeing: A young starter smells cheesy, funky, sweaty or downright alarming.
New starters can pass through unusual aroma stages as their microbial community changes. Judge the smell together with age, appearance and fermentation pattern, and distinguish funky fermentation from visible spoilage.

White Wrinkly Film / Kahm Yeast
What you’re seeing: A flat white or cream-colored film forms across the surface.
A surface film can look very different from fuzzy mold. Use appearance, color and texture to identify what you are seeing; if growth is fuzzy, colored or suspicious, take the conservative route and discard.

Before changing flour, water, ratio, temperature and feeding time all at once, check the same four things every time. A repeatable process makes it much easier to understand what changed.
👀 1. LookCheck rise, bubbles, surface growth, separation and consistency.
👃 2. SmellNotice whether it smells pleasantly fermented, sharply acidic, alcoholic or genuinely spoiled.
⏱️ 3. TrackMark the jar after feeding and record how long it takes to rise, peak and begin falling.
🌡️ 4. CompareCheck temperature, flour, water and feeding ratio against the last time your starter behaved normally.
Important: Hooch, a sharp aroma or a quiet starter are not the same thing as visible mold. If you see fuzzy growth or suspicious pink/orange contamination, discard the starter rather than scraping the surface and continuing.
