POV: I Get This DM Every Day - Why Your Starter Won't Rise

BAKERY POV SERIES • #2 - NOT RISING

POV: I Get This DM Every Day. "My Starter Won't Rise."

You fed it. You waited 8 hours. Still flat, no doubling. I get this photo in my DMs daily — here's what I see and what I'd do on my bench.

Real talk: it's almost never you

"If it doesn't double in 4-8 hours at 75-80F, it's not ready to bake — it's weak. Not dead, just weak." — what I tell every DM
🫧 Flat after 8 hrsThe #1 photo I get. No bubbles, no dome, just paste. Needs strength.
⏰ 12+ hour riserIf it takes 12 hours to move, it's too sluggish to leaven bread. My bench does 4-8.
👃 Acetone / nail polishSharp smell = hungry + acidic. Classic DM with hooch on top.
📉 Rose day 2 then diedDay 2-3 false rise is bacteria, not yeast. Then stalls. I tell them this is normal for scratch.

My bench test: Feed 1:2:2 thick, 75-80F, mark jar. If no 100% rise in 8 hours, I wouldn't bake with it — I'd feed or replace.

What I Bake With So Mine Does Rise

Squirrelly Girl Starter is a mature bakery culture from Squirrelly Girl Sourdough — the same jar I feed every morning in Princeton, BC.

  • I watch it double daily: 4-8 hrs at 75-80F, domed top, bubbly walls — that's what I mix dough with.
  • Not a scratch gamble: Already stable yeast + bacteria balance, not chaotic day 3 bacteria.
  • Fast for beginners: Most bakers see activity 2-4 days, full doubling 5-7 days — not 14-21 days guessing.
  • 100% Activation Guarantee: Follow included guide. If it doesn't activate, we replace or refund.
  • Keep it forever: Once active, same feeds keep it rising every bake.

How I'd Fix Yours On My Bench

1
Warm it to 75-80F
My bakery is cold too. I use top of fridge, oven light on. Below 70F yeast sleeps.
2
Thick 1:2:2 + rye
Keep 25g. Feed 40g unbleached AP + 10g rye + 50g filtered water. Thick like peanut butter. I never use cups.
3
12 hour watch, not 24
Feed twice daily 3 days. Mark level. Should rise 50-100% day 2-3 if alive. If zero after 14 days proper, I replace.

If still flat after 14 days warm thick feeds, don't waste more flour. That's when I'd switch to Squirrelly Girl Starter.

People Also Ask — Bakery POV

Is my starter dead if it won't rise?

Almost never. Pink/orange or fuzzy mold = toss. Flat + no rise = weak, not dead. Try warm thick feeds, but if 14 days no double, replace with mature culture.

Why does scratch fail so often?

You're catching wild yeast with flour + water. Inconsistent. I failed twice before I got reliable. Bakery cultures are stable because they're years old.

What flour do you actually use?

Unbleached all-purpose + 10-20% whole rye, filtered water. No bleached, no chlorinated tap. That's in our included guide.

Is buying starter cheating?

I share mine because bakeries have shared for centuries. It's how you get reliable. I still feed same jar daily — buying just skips the gamble.
