How I Time Peak On My Bench

25g starter 50g AP +10g rye +60g water, rubber band mark.

Watch dome 4-8 hrs
Bubbly sides, domed top, slight jiggle = peak. Before it dips.

Need bake 8am? Feed 10pm prior night at 1:3:3 so peak 6-8am.
