Your Sourdough Starter Failed the Float Test. Is It Actually Ready?

A sourdough starter that sinks in water is not automatically weak, dead or unready to bake. The float test is influenced by trapped gas, hydration, how the sample is handled and where your starter is in its fermentation cycle.

Instead of letting one spoonful of starter decide the fate of your loaf, look at the full pattern: how reliably your starter rises after feeding, what it looks like near peak activity, its aroma and how consistently it repeats that behavior.

Why Can an Active Sourdough Starter Sink?

The float test asks a very narrow question: does this particular sample contain enough trapped gas to stay buoyant in water? That is not exactly the same as asking whether the culture is active enough to ferment dough.

What to Check Instead of the Float Test

Use repeatable observations. Your starter does not need to behave identically every day, but a healthy, established culture should develop a recognizable fermentation pattern under similar conditions.

Mark the starter immediately after feeding

Use a rubber band or washable marker at the starting level. This gives you a real reference point instead of guessing how much it rose.

Watch the entire rise-and-fall cycle

Look for expansion, bubbles along the sides and throughout the starter, then a peak followed eventually by a decline. Record approximately how long that cycle takes in your kitchen.

Look for consistency across feedings

One dramatic rise is less informative than repeated activity. A starter that responds predictably to similar feedings gives you a much better baking signal.

Use aroma and appearance as supporting clues

A healthy active starter commonly smells pleasantly fermented, yeasty or mildly tangy. Strong acetone or unusually sharp aromas can indicate that the starter has gone a long time between feedings.

  • It rises reliably after feeding: the failed float test alone is not a reason to discard it.
  • You stirred it before testing: you may simply have released the gas that would have helped the sample float.
  • You tested immediately after feeding: give the culture time to ferment and observe its normal rise cycle.
  • It floats but barely rises in the jar: do not treat floating as proof that the starter is strong or ready.
  • It has little activity over repeated feedings: troubleshoot temperature, feeding routine, flour and starter consistency rather than repeating the float test.

So When Is Sourdough Starter Ready to Bake With?

There is no single universal hour or rise percentage that works for every starter, flour and kitchen. A better goal is a culture that responds predictably after feeding and reaches a recognizable active peak.

If your starter repeatedly expands well under similar conditions, shows fermentation throughout the jar and has a healthy fermented aroma, you have much more useful information than the float test can provide.

Does sourdough starter have to float before baking?

Why does my starter float but my bread still come out flat?

Should I do the float test before every loaf?
