POV: No Bubbles Means No Yeast - Why Your Starter Looks Flat
POV: No Bubbles Means No Yeast. Why Your Starter Looks Flat.
No bubbles 6 hours after feeding? In my bakery that means not enough active yeast to leaven bread. Here's what flat really means from the bench.
Get A Starter That Bubbles →What I see when there's no bubbles
My quick test: Feed thick 1:2:2, mark level, 75-80F. If zero bubbles + zero rise 8 hours, too weak to bake — needs strength or replacement.

How I'd Get Bubbles Back On My Bench
Top of fridge, oven with light on. Cold = no bubbles. Warm = yeast awake.
Keep 25g starter. Feed 50g AP + 10g whole rye + 60g filtered water. Thick like peanut butter, not pourable.
Every 12 hrs 3 days. Look for tiny bubbles on sides and bottom first, then rise. Mark jar.
If still flat zero bubbles after 3 days warm thick feeds, culture too weak. I'd switch to Squirrelly Girl Starter and save flour.
People Also Ask — Bakery POV
Why no bubbles after feeding?
Too cold, bleached flour, chlorinated water, or too young. Move 75-80F, unbleached + rye + filtered water, 1:2:2 every 12 hrs. If no bubbles 10 days, too weak.
How long until I see bubbles?
Scratch: 7-14 days real yeast. Mature dehydrated: 2-4 days bubbles, 5-7 days double. Day 2-3 bubbles are bacteria false rise.
Is flat starter dead?
Not dead, weak — unless pink/orange fuzzy mold, then toss. Flat = needs warmth, better flour, thick feeds. 14 days still flat = replace.
Can I bake flat?
No. No bubbles + no rise = won't rise bread. Wait for doubles 4-8 hrs + bubbly + sweet yeasty smell, or start with proven bubbly culture.
