What I smell on my bench

"My bakery should smell like sweet yeast, tangy bread — not chemicals. If jar stings nose like nail polish, it's screaming hungry. I don't bake with it that day." — Squirrelly Girl Bakery
💅 Nail polish removerSharp chemical sting. Most common DM: 'my starter smells like acetone'. = hungry acid spike.
🍷 Alcohol / boozyBeer/wine left out. Yeast ran out of food, making alcohol + acid.
🍶 Vinegar / super sourVery tangy acidic. Bacteria took over, missed feeds or too light.
🫙 Plus hooch on topDark liquid layer = acid + alcohol. Almost always comes together with acetone smell.

Quick Guidelines - Ready to Copy:

  • Sweet yeasty + tangy + bubbly + doubles? → Perfect, bake with it
  • Sharp acetone / alcohol + hooch + flat? → Hungry acidic, pour off dark, heavy 1:3:3 feed, warm 75-80F
  • Smell keeps coming back 12 hrs? → Culture too weak acidic, feeding too small
  • Pink / orange / fuzzy? → NOT acetone — toss, that's mold

How I'd Fix Acetone Smell On My Bench

1
Pour off dark hooch, keep 25g
Don't stir dark liquid back in if strong smell. Keep small amount underneath.
2
Heavy feed 1:3:3 thick
25g starter + 75g unbleached AP (15g rye) + 75g filtered water. Thick like peanut butter. Thick holds better balance.
3
Warm 75-80F, 12 hr repeat 2-3 days
Top of fridge, oven light on. Feed every 12 hrs. Smell should turn chemical → sweet yeasty.

If snaps back to acetone after 3-4 days heavy feeds, culture too weak acidic. I'd switch to Squirrelly Girl Starter and save flour + nose.

People Also Ask — Bakery POV

Why nail polish remover smell?

Yeast ran out of food, making excess acid + alcohol. Feed more flour, more often, warmer spot. If keeps happening, too weak — replace with mature balanced culture.

Can I use acetone smell starter?

After feed until smell turns sweet/yeasty and doubles 4-8 hrs. Don't bake while smells like acetone — bread overly sour, won't rise well.

Is acetone smell dangerous?

No, fermentation byproduct not contamination. Pink/orange/fuzzy mold IS dangerous — discard.

Alcohol vs vinegar smell difference?

Both hunger. Alcohol/acetone = yeast starving. Vinegar = bacteria acetic acid. Same fix: bigger frequent feeds + stronger starter.
