POV: That Dark Liquid Is Hooch - Why Your Starter Separates

BAKERY POV SERIES • #4 - HOOCH / LIQUID ON TOP

POV: That Dark Liquid Is Hooch. Why Your Starter Separates.

Dark liquid on top isn't mold — it's hooch from a hungry, acidic starter. Here's what I do on my bench when I see it.

What I see when there's liquid on top

"If it's dark brown/black with strong acetone smell, I pour it off. If light and mild, I can stir for more sour. But hooch every 12 hours = too acidic, needs heavy feed." — Squirrelly Girl Bakery
⚫ Dark hooch on topBlack/brown/gray. Old alcohol + acid. Pour off, don't stir dark back in.
💧 Clear separationWater on top, flour settled below. Over-hydrated or under-fed. Needs thick feeds.
👃 Acetone with hoochHooch almost always comes with nail polish smell. Hunger signal.
🫧 Plus no riseHooch + flat + no bubbles = too weak/acidic to bake. Needs fix or replacement.

Quick Guidelines - Ready to Copy for Your Fridge:

  • Light hooch + sweet smell + bubbly? → Stir in for more tang OK
  • Dark hooch + strong acetone + flat? → POUR OFF completely, heavy feed 1:3:3
  • Hooch every 12 hours? → Feeding too small or too infrequent — go thicker, more often, warmer
  • Pink/orange/fuzzy? → NOT hooch — toss starter, that's mold

What I Use So Mine Doesn't Separate Every Day

Squirrelly Girl Starter is a mature bakery culture from Squirrelly Girl Sourdough — dried while thick and strong so it rehydrates thick, not watery.

  • Stays thick: Balanced culture holds structure, not splitting into liquid + paste.
  • Less hooch: Thick 1:2:2 / 1:3:3 feeds + 75-80F = less hungry crashes.
  • Forgiving: Handles fridge better than new scratch — less hooch after cold storage.
  • 100% Activation Guarantee: Follow included guide. If it doesn't activate thick and bubbly, we replace or refund.
  • Keep it forever: Once thick, simple feeds keep it thick.

How I'd Fix Hooch On My Bench

1
Check color + smell
Light + mild yeasty = stir OK if you want sour. Dark + strong chemical = pour off entirely.
2
Heavy thick feed 1:3:3
Keep 25g starter. Feed 75g unbleached AP + 25g whole rye + 75g filtered water. Thick like peanut butter — not pancake batter. My bench is thick.
3
Warm 75-80F + 12 hr cycle 3 days
Top of fridge, oven light on. Feed every 12 hrs. Should see bubbles, rise, no new hooch.

If hooch returns within 12 hrs after 3 days heavy feeds, culture too acidic. I'd switch to Squirrelly Girl Starter and save flour.

People Also Ask — Bakery POV

What is the liquid on top?

Hooch — alcohol + acids when starter eats all flour. Safe, but warning to change feeding: thicker, more often, warmer.

Should I stir hooch back in?

Only light + mild smelling and you want sour flavor. Dark or strong acetone = pour off. I pour off dark on my bench.

Why does mine keep separating?

Too much water, too little flour, or too long between feeds. Use 1:3:3 thick, 75-80F, every 12 hrs. Or start with stronger mature culture.

Is hooch bad?

Not bad itself — hunger signal. But constant hooch = feeding ratio too small. Increase flour and feed 12 hr at warm temp. Pink/orange fuzzy = mold, toss.
