POV: I Bake Every Day - Your Float Test Failed Because It's Not Ready Yet
POV: I Bake With This Every Day. Here's Why Your Float Test Failed.
I see hundreds of starters a year in DMs and in our bakery. Float test failing is almost always the same 4 things — and none mean your starter is dead.
Bake With What I Bake With →Real talk from the bakery bench
What I actually look for: Doubled in 4-8 hrs at 75-80F + domed top + bubbles on sides + sweet yeasty smell. Float is just bonus check.
What I Bake With So I Don't Get Float Fails
Squirrelly Girl Starter is a mature bakery culture from Squirrelly Girl Sourdough — this is literally what I feed and bake with every day in Princeton, BC.
- I see it float daily: At peak it doubles 4-8 hrs and floats — I test before I mix dough.
- Thick holds gas: Not watery — traps CO2 so it actually floats instead of sinking like soup.
- Forgiving in cold: Built in cold Canadian kitchen, so it still rises when your kitchen is chilly.
- 100% Activation Guarantee: Follow included guide. If it doesn't activate, we replace or refund.
- Keep it forever: Once active, same feeds keep it float-ready for every bake.

How I Would Fix It On My Bench (3 Steps)
Keep 25g. Feed 40g unbleached all-purpose + 10g whole rye + 50g filtered water. Thick. I don't measure cups — I use grams.
Top of fridge. Mark jar. Wait for domed top and double — that's your window. For me that's 5-7 hours.
Small spoonful, gently lay on water. Don't stir, don't slam. If it floats 10 sec, it's ready. If sinks but doubled, bake anyway — you smashed bubbles.
If after 14 days thick warm feeds it never doubles and never floats, it's not you — it's weak culture. I would replace it with Squirrelly Girl Starter.
People Also Ask — Bakery POV
Do you really use float test in a real bakery?
Quick check yes, but I trust doubling in 4-8 hrs, bubbly walls, and smell. Float test is good for beginners, but doubling is real proof.
Why did mine float once then never again?
You caught peak once. Then you fed different ratio or kitchen colder. Keep same 1:2:2 thick feed, same warm spot, test at same peak window.
Can I bake if it doubled but sank?
If it doubled in 4-8 hrs, domed, bubbly — yes, bake. You probably degassed it spooning. My rule: doubled + bubbly = bake.
What if it never doubles and never floats?
After 14 days proper feeds, weak yeast never established. Don't waste more flour — switch to mature culture like Squirrelly Girl Starter.
Bake With What I Bake With.
Same culture from my bench to your kitchen. Doubles, floats, bakes.
