This Caprese Sourdough Sandwich is fresh and bright, but still satisfying. The mozzarella brings creaminess, the tomatoes bring sweetness and acidity, the basil brings that unmistakable summer flavor, and the sourdough gives the whole thing enough tang and texture to turn a simple Caprese into an actual meal.

🌿 Ingredients

  • 4 thick slices sourdough bread
  • 8 ounces fresh mozzarella, sliced
  • 2 medium ripe tomatoes, sliced
  • 1 generous handful fresh basil leaves
  • 2 tablespoons extra-virgin olive oil, divided
  • 2 tablespoons balsamic glaze
  • 1/2 teaspoon flaky salt or kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 small garlic clove, optional

🔥 How to Make It

  1. Prepare the tomatoes.
    Slice the tomatoes and place them on a plate or paper towel. Sprinkle lightly with salt and let them sit for about 5 minutes while you prepare everything else.
  2. Toast the sourdough.
    Brush the bread lightly with olive oil and toast in a skillet, toaster, or under the broiler until golden around the edges but still slightly chewy in the center.
  3. Add garlic if you want it.
    For extra flavor, rub the warm toasted sourdough lightly with the cut side of a garlic clove. A little goes a long way.
  4. Start with the mozzarella.
    Layer fresh mozzarella over two slices of toasted sourdough.
  5. Add the tomatoes.
    Pat the tomato slices gently to remove excess moisture, then layer them over the mozzarella. Season with black pepper.
  6. Add the basil.
    Tuck plenty of fresh basil leaves over the tomatoes.
  7. Finish with olive oil and balsamic.
    Drizzle lightly with extra-virgin olive oil and balsamic glaze. Don't drown it. We're making a sandwich, not irrigating farmland.
  8. Close and serve.
    Top with the remaining slices of toasted sourdough, press gently, slice, and serve immediately.

Use tomatoes that are actually ripe, juicy, and flavorful. A sad, pale supermarket tomato in the middle of winter can make even excellent mozzarella question why it showed up.
