This Chicken Pesto Sourdough Sandwich layers juicy seasoned chicken with bright basil pesto, ripe tomato, and melty provolone or mozzarella between thick slices of golden sourdough.

The pesto brings herbs, garlic, Parmesan, and olive oil; the tomato adds freshness; and the sourdough gives the whole sandwich enough tang and chew to keep all that rich, savory flavor balanced.

🥪 Ingredients

  • 4 thick slices sourdough bread
  • 1 large boneless skinless chicken breast, about 8 ounces
  • 1/3 cup basil pesto
  • 4 slices provolone or fresh mozzarella
  • 4 slices ripe tomato
  • 1 cup arugula or baby spinach, optional
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon softened butter or olive oil for toasting the bread

🔥 How to Make It

  1. Prepare the chicken.
    Slice the chicken breast horizontally into two thinner cutlets. Pat dry and season both sides with garlic powder, salt, and black pepper.
  2. Cook the chicken.
    Heat the olive oil in a skillet over medium heat. Cook the chicken for about 4–5 minutes per side, or until golden and cooked through to 165°F / 74°C.
  3. Add the pesto.
    Spoon a little pesto over each chicken cutlet during the final minute of cooking. You want it warm and fragrant, not fried into oblivion.
  4. Melt the cheese.
    Top each chicken cutlet with two slices of provolone or mozzarella. Cover the skillet for 30–60 seconds until the cheese is melted.
  5. Toast the sourdough.
    Lightly butter or brush the bread with olive oil and toast until golden around the edges while still chewy in the center.
  6. Spread the pesto.
    Spread the remaining basil pesto over the toasted sourdough.
  7. Build the sandwiches.
    Add the cheesy pesto chicken, ripe tomato slices, and arugula or spinach if using.
  8. Close and serve.
    Top with the remaining sourdough slices, press gently, cut in half, and serve while the chicken and cheese are still warm.

Pesto tastes best when its basil, garlic, cheese, and olive oil still taste fresh.

Add a little to the chicken at the end of cooking, then spread the rest directly onto the toasted sourdough. That gives you warm pesto flavor without turning those beautiful herbs into something that tastes like they spent too long near a radiator.
