Crispy Chicken Sourdough Sandwich

A crispy chicken sandwich should crunch loudly enough that the person across the table knows you made the right lunch decision.
This one starts with juicy chicken coated in a crisp seasoned crust, then piles on fresh lettuce, ripe tomato, tangy pickles, and a creamy Dijon sauce between thick slices of golden toasted sourdough.
The sourdough is doing important work here too. It brings tang, chew, and enough structure to handle crispy chicken, vegetables, and sauce without turning into a soggy surrender halfway through the sandwich.
🍗 Crispy Chicken Sourdough Sandwich
Juicy crispy chicken, lettuce, tomato, pickles, creamy sauce, and golden toasted sourdough.
🥪 Ingredients
For the Crispy Chicken
- 1 large boneless skinless chicken breast, about 8 ounces
- 1/2 cup all-purpose flour
- 1/2 cup panko breadcrumbs
- 1 large egg
- 1 tablespoon milk
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 to 4 tablespoons neutral oil for shallow frying
For the Sandwiches
- 4 thick slices sourdough bread
- 4 leaves crisp lettuce
- 4 slices ripe tomato
- 8 to 10 dill pickle slices
- 1 tablespoon softened butter or olive oil for toasting the bread
For the Creamy Sauce
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon pickle juice or lemon juice
- 1/4 teaspoon garlic powder
- Freshly ground black pepper, to taste
🔥 How to Make It

Make the chicken cutlets.
Slice the chicken breast horizontally into two thinner cutlets. If needed, gently pound them to an even thickness so they cook at the same rate. -
Season the coating.
In one shallow bowl, combine the flour, garlic powder, smoked paprika, onion powder, salt, and black pepper. Put the panko in a second bowl. -
Whisk the egg.
In a third shallow bowl, whisk the egg with the milk. -
Bread the chicken.
Coat each cutlet in the seasoned flour, dip it into the egg, then press it firmly into the panko so the entire surface gets a good crunchy coating. -
Cook the chicken.
Heat the oil in a skillet over medium heat. Cook the chicken for about 4–5 minutes per side, or until deeply golden, crisp, and cooked through to 165°F / 74°C. -
Rest the chicken.
Transfer the cutlets to a wire rack or paper towel-lined plate and let them rest for a couple of minutes. Do not cover them, unless you would like to steam away the crunch you just worked for. -
Make the sauce.
Stir together the mayonnaise, Dijon, pickle juice or lemon juice, garlic powder, and black pepper. -
Toast the sourdough.
Lightly butter or brush the bread with olive oil and toast until golden and crisp around the edges. -
Build the sandwiches.
Spread the creamy sauce over the toasted sourdough. Add lettuce, tomato, a crispy chicken cutlet, and plenty of pickles. -
Close and serve.
Top with the remaining sourdough, press gently, slice, and serve immediately while the chicken is still hot and crunchy.
🔥 Keep That Chicken Crispy
Once the chicken comes out of the skillet, give it somewhere for steam to escape.
A wire rack is ideal because air can circulate underneath the cutlet. If you pile hot crispy chicken onto a plate and cover it, the steam starts softening the crust almost immediately.
We did not bread chicken just to accidentally turn it into a warm sponge.

It also gives the sandwich enough backbone that the filling stays between the bread instead of making an unscheduled trip onto your shirt.

Thin, even cutlets cook quickly and give you a better ratio of crunchy coating to juicy chicken.
🥒 Use Plenty of Pickles
Acidic, crunchy pickles cut through the fried chicken and creamy sauce. They are not decoration. They have a job.
🥬 Add the Lettuce Last
Keep the greens cold and crisp until assembly so they contrast with the hot chicken instead of wilting before the first bite.
🍞 Toast the Sourdough
Lightly toasted sourdough creates a barrier against the sauce and adds even more crunch to the sandwich.

Once you've nailed the crunchy chicken, there are plenty of ways to take this sandwich in a different direction.
