BBQ Chicken Bacon Sourdough Sandwich Recipe

🥪 Squirrelly Girl Sandwich Series

BBQ Chicken Bacon Sourdough Sandwich

Saucy BBQ chicken, crispy bacon, gooey melted cheese, and fresh toppings piled high between golden toasted sourdough. Smoky, cheesy, messy, and exactly as serious as lunch needs to be.

Some sandwiches are tidy little lunch arrangements. This is not one of them.

This BBQ Chicken Bacon Sourdough Sandwich starts with juicy chicken tossed in smoky barbecue sauce, adds crispy bacon and melted cheese, then stacks everything with fresh toppings between thick slices of golden sourdough.

It's smoky, sweet, salty, cheesy, crunchy, and just messy enough to require the kind of napkin commitment usually reserved for ribs.

And that is exactly why we're making it.

🥪 Ingredients

  • 4 thick slices sourdough bread
  • 1 large boneless skinless chicken breast, about 8 ounces
  • 4 slices bacon
  • 1/3 cup barbecue sauce, plus more if desired
  • 2 slices sharp cheddar, Monterey Jack, or provolone cheese
  • 4 leaves crisp lettuce
  • 4 slices ripe tomato
  • 1/4 small red onion, thinly sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon softened butter or olive oil for toasting the bread

🔥 How to Make It

  1. Prepare the chicken.
Slice the chicken breast horizontally into two thinner cutlets. Season both sides with smoked paprika, garlic powder, salt, and black pepper.
  2. Cook the bacon.
Cook the bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate and guard it carefully from anyone passing through the kitchen.
  3. Cook the chicken.
Heat the olive oil in a skillet over medium heat. Cook the chicken for about 4–5 minutes per side, or until browned and the center reaches 165°F / 74°C.
  4. Add the BBQ sauce.
Reduce the heat to low and brush or spoon barbecue sauce generously over both pieces of chicken. Turn once to coat and let the sauce warm for about 30 seconds.
  5. Melt the cheese.
Place cheese over each piece of BBQ chicken. Cover the skillet briefly and let the cheese melt.
  6. Toast the sourdough.
Lightly butter or brush the bread with olive oil and toast until golden and crisp around the edges.
  7. Build the sandwiches.
Add lettuce and tomato to two slices of toasted sourdough. Top with the cheesy BBQ chicken, crispy bacon, and thinly sliced red onion.
  8. Finish and serve.
Add another drizzle of barbecue sauce if you're feeling ambitious, top with the remaining sourdough, slice, and serve immediately.

🔥 Sauce the Chicken at the End

Barbecue sauce contains sugar, which means it can burn quickly if it spends too long in a hot skillet.

Cook the chicken first, then add the BBQ sauce during the final minute so it gets warm, sticky, and glossy without turning into a layer of accidental charcoal.

🍞 Why Sourdough Works So Well Here

BBQ chicken brings sweetness, smoke, moisture, and a lot of sauce. Bacon adds salt and fat. Melted cheese adds even more richness.

This is exactly the kind of sandwich that needs bread with some backbone.

Toasted sourdough stays sturdy under all those juicy fillings, while its natural tang cuts through the barbecue sauce and cheese and keeps every bite from becoming overly sweet or heavy.

It's not just bread here. It's structural engineering.

🏆 Four Ways to Make It Even Better

🥓 Get the Bacon Crisp

The sandwich already has plenty of soft, juicy ingredients. Crispy bacon gives you the crunch it needs.

🧀 Melt Cheese Directly on the Chicken

Letting the cheese melt over the hot BBQ chicken helps everything stick together and gives you a much better cheese pull.

🧅 Add Something Sharp

Thin red onion gives the sandwich a crisp, sharp bite that balances the sweet barbecue sauce beautifully.

🍞 Toast the Bread Properly

You want a golden crust with enough crispness to stand up to the sauce, but the center should still have some chew.

🤤 BBQ Chicken Bacon Variations

This sandwich is already doing a lot, but that has never stopped us before.

  • Add pickled jalapeños for heat
  • Swap cheddar for pepper jack
  • Add creamy coleslaw instead of lettuce
  • Use smoky chipotle BBQ sauce
  • Add sliced avocado
  • Add crispy fried onions
  • Use leftover roasted or rotisserie chicken for a faster version
  • Drizzle with ranch if you want to completely abandon restraint

🐿️ Squirrelly Girl Warning

BBQ sauce, melted cheese, bacon, tomato, and toasted sourdough have absolutely no interest in staying neatly inside the sandwich.

Use both hands. Keep napkins nearby. Accept the consequences.
