🥪 Ingredients
- 4 thick slices sourdough bread
- 1 large boneless skinless chicken breast, about 8 ounces
- 1/3 cup Buffalo sauce, plus more if desired
- 2 slices Monterey Jack, provolone, or pepper jack cheese
- 4 leaves crisp lettuce
- 4 slices ripe tomato
- 1/4 small red onion, thinly sliced, optional
- 3 tablespoons ranch or blue cheese dressing
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon softened butter or olive oil for toasting the bread
🔥 How to Make It

Prepare the chicken.
Slice the chicken breast horizontally into two thinner cutlets. Season both sides with garlic powder, smoked paprika, salt, and black pepper. -
Cook the chicken.
Heat the olive oil in a skillet over medium heat. Cook the chicken for about 4–5 minutes per side, or until browned and the center reaches 165°F / 74°C. -
Add the Buffalo sauce.
Reduce the heat to low and coat the chicken generously with Buffalo sauce. Turn each piece once so both sides get properly involved. -
Melt the cheese.
Top each piece of chicken with cheese, cover the skillet briefly, and let it melt over the hot Buffalo chicken. -
Toast the sourdough.
Lightly butter or brush the bread with olive oil and toast until golden and crisp around the edges. -
Add the cool stuff.
Spread ranch or blue cheese dressing over two slices of toasted sourdough. Add lettuce, tomato, and red onion if using. -
Add the chicken.
Place the cheesy Buffalo chicken over the fresh toppings and drizzle with a little extra Buffalo sauce if you want more heat. -
Close and serve.
Top with the remaining sourdough, press gently, slice, and serve immediately while everything is hot, cool, crunchy, creamy, and slightly out of control.
