Pulled Pork Sourdough Sandwich

Tender pulled pork smothered in smoky BBQ sauce and topped with cool, creamy coleslaw on golden toasted sourdough. Messy, saucy, crunchy, and absolutely worth making.

Pulled pork sandwiches are not built for neat little bites.

They're built for tender pork, plenty of smoky barbecue sauce, a cold pile of crunchy coleslaw, and bread strong enough to keep the whole operation from landing in your lap.

This Pulled Pork Sourdough Sandwich checks every box. The warm pork is rich and saucy, the coleslaw brings cool crunch and tang, and toasted sourdough gives the sandwich enough chew and structure to hold everything together while adding a little extra flavor of its own.

🥪 Ingredients

  • 4 thick slices sourdough bread
  • 2 cups cooked pulled pork
  • 1/2 cup barbecue sauce, plus more if desired
  • 1 1/2 cups prepared coleslaw
  • 2 tablespoons dill pickle slices, optional
  • 2 tablespoons thinly sliced red onion, optional
  • 1 tablespoon softened butter or olive oil for toasting the bread
  • Freshly ground black pepper, to taste

🔥 How to Make It

  1. Warm the pulled pork.
Add the pulled pork to a skillet over medium-low heat with a splash of water if needed. Warm gently until heated through.
  2. Add the barbecue sauce.
Stir in the barbecue sauce and cook for another 2–3 minutes until the pork is hot, glossy, and properly saucy.
  3. Toast the sourdough.
Lightly butter or brush the bread with olive oil and toast in a skillet until golden and crisp around the edges.
  4. Build the base.
Divide the warm BBQ pulled pork between two slices of toasted sourdough.
  5. Add the coleslaw.
Pile a generous amount of cold coleslaw over the hot pork. The contrast between warm, smoky pork and cool, crunchy slaw is the entire point.
  6. Add extras.
Add pickles or thinly sliced red onion if using, plus a little extra barbecue sauce if your personal sandwich philosophy leans saucy.
  7. Close and serve.
Top with the remaining sourdough slices, press gently, slice, and serve immediately with several napkins and realistic expectations.

🥬 Keep the Coleslaw Cold

The best pulled pork sandwich is all about contrast.

Hot, tender pork plus cold, crisp coleslaw gives you richness and freshness in the same bite. If the slaw gets warm and limp before the sandwich hits the table, you lose half the fun.

Add it last, right before serving.

🍞 Why Sourdough Is Perfect for Pulled Pork

Pulled pork is juicy. BBQ sauce is saucy. Coleslaw is creamy.

This is exactly the moment when weak bread starts reconsidering its career choices.

Toasted sourdough has enough structure to carry the pork and slaw without collapsing, while its tang cuts through the rich meat and sweet barbecue sauce.

It's not just bread here. It's part flavor, part structural engineering.

🏆 Four Ways to Make It Better

🍖 Don't Dry Out the Pork

Reheat gently over lower heat. Add a splash of water or extra BBQ sauce if the pork needs a little moisture.

🥬 Use Crunchy Slaw

The coleslaw should bring texture, not disappear into the sandwich. Cabbage with a little bite is exactly what you want.

🍞 Toast the Sourdough

Toasting gives the bread a protective crisp surface and makes it much better at handling juicy pork and creamy slaw.

🥒 Add Something Tangy

Pickles or red onion cut through the richness and keep every bite from becoming too heavy.

🤤 Pulled Pork Sandwich Variations

BBQ pork and coleslaw are already doing excellent work together, but there is plenty of room to wander.

  • Add sharp cheddar or pepper jack cheese
  • Add sliced jalapeños
  • Add crispy fried onions
  • Use vinegar slaw instead of creamy coleslaw
  • Add dill pickles
  • Add a drizzle of hot honey
  • Use spicy chipotle barbecue sauce
  • Add a spoonful of pickled red onions

🐿️ Squirrelly Girl Warning

Pulled pork, barbecue sauce, and coleslaw have formed an alliance against clean shirts.
