  • 4 thick slices sourdough bread
  • 3 ounces thinly sliced salami
  • 3 ounces thinly sliced ham
  • 4 slices provolone cheese
  • 1 cup shredded iceberg or romaine lettuce
  • 4 slices ripe tomato
  • 1/4 small red onion, very thinly sliced
  • 1/4 cup sliced pepperoncini or banana peppers
  • 2 tablespoons mayonnaise, optional
  • 2 tablespoons Italian vinaigrette or dressing
  • 1 teaspoon red wine vinegar, optional
  • 1/2 teaspoon dried oregano
  • Freshly ground black pepper, to taste
  • 1 tablespoon softened butter or olive oil for toasting the bread

  1. Toast the sourdough.
    Lightly butter or brush the bread with olive oil and toast in a skillet until golden around the edges while still slightly chewy in the center.
  2. Dress the lettuce.
    Toss the shredded lettuce with the Italian dressing, red wine vinegar if using, dried oregano, and a little black pepper.
  3. Start with the cheese.
    Lay provolone over two slices of toasted sourdough. This gives the bread a little protection from the juicy vegetables.
  4. Add the deli meats.
    Layer on the salami and ham, folding the slices rather than laying them completely flat so the sandwich gets a little air and texture between the layers.
  5. Add the vegetables.
    Pile on the dressed lettuce, tomato, red onion, and pepperoncini.
  6. Add mayonnaise if using.
