This one refuses to cooperate.
We're layering tender turkey with smoky crisp bacon, creamy avocado, juicy tomato, fresh lettuce, and a simple tangy spread, then putting the whole situation between slices of golden toasted sourdough.
It's creamy, crunchy, salty, fresh, and hearty enough to actually feel like lunch instead of something you ate while standing over the kitchen counter wondering where the afternoon went.

- 2 thick slices sourdough bread
- 4 ounces sliced roasted turkey
- 3 slices bacon, cooked until crisp
- 1/2 ripe avocado, sliced
- 2 slices ripe tomato
- 2 leaves crisp lettuce
- 1 slice sharp cheddar or provolone cheese, optional
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon butter or olive oil for toasting the bread
- Pinch of salt and freshly ground black pepper

Cook the bacon.
Cook the bacon until crisp, then transfer it to a paper towel-lined plate. Try not to eat one slice while assembling the sandwich. We know what happens. -
Toast the sourdough.
Lightly butter or brush the outside of the sourdough with olive oil. Toast in a skillet over medium heat until golden and crisp. -
Make the spread.
Stir together the mayonnaise and Dijon mustard. Spread it over the inside of both slices of toasted sourdough. -
Layer the turkey.
Pile the roasted turkey onto one slice of bread. If using cheese, add it over the turkey while the bread is still warm so it softens slightly. -
Add the good stuff.
Top with crispy bacon, avocado, tomato, and lettuce. Season the avocado and tomato lightly with salt and black pepper. -
Close and serve.
Add the second slice of sourdough, press gently, slice in half, and serve immediately.

Use an avocado that gives slightly when pressed but isn't mushy.
Too firm and you'll have avocado slices trying to escape the sandwich. Too soft and you've basically made guacamole whether you intended to or not.
And always season the avocado with a tiny pinch of salt. It makes a surprisingly big difference.
