It takes turkey, bacon, cheese, lettuce, tomato, mayonnaise, and several layers of bread and stacks them into the kind of lunch that requires both hands and a little confidence.

Using toasted sourdough makes the whole thing even better. You get crisp edges, chewy bread, plenty of tang, and enough structure to hold all those layers together without the sandwich becoming a mid-lunch engineering failure.

🥪 Ingredients

  • 6 slices sourdough bread
  • 8 ounces sliced turkey
  • 6 slices bacon
  • 4 slices cheddar, Swiss, or provolone cheese
  • 6 leaves crisp lettuce
  • 6 slices ripe tomato
  • 4 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard, optional
  • 1 tablespoon softened butter or olive oil for toasting the bread
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

🔥 How to Make It

  1. Cook the bacon.
    Cook the bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate and set aside.
  2. Toast the sourdough.
    Lightly butter or brush all six slices with olive oil and toast until golden and crisp around the edges.
  3. Make the spread.
    Stir the mayonnaise with Dijon mustard if using. This is not complicated, but it does make the mayonnaise feel accomplished.
  4. Build the first layer.
    Spread mayo on two slices of toasted sourdough. Add lettuce, tomato, half the turkey, and one slice of cheese to each. Season the tomato lightly with salt and pepper.
  5. Add the middle bread.
    Place another toasted sourdough slice over each sandwich and spread a little mayonnaise on top.
  6. Build the second layer.
    Add the remaining turkey, crispy bacon, another slice of cheese, lettuce, and tomato.
  7. Finish the stack.
    Top each sandwich with the final toasted sourdough slice and press down gently enough to stabilize the situation.
  8. Slice and serve.
    Secure with sandwich picks if needed, cut each club diagonally, and serve immediately.
