Sourdough Breakfast Sandwich
Fluffy eggs, crispy bacon, gooey melted cheese, creamy avocado, and fresh toppings stacked between golden toasted sourdough. Breakfast has officially become a sandwich problem.
A good breakfast sandwich should make getting out of bed feel like a reasonable decision.
This Sourdough Breakfast Sandwich piles fluffy eggs, crispy bacon, melted cheese, creamy avocado, and fresh tomato onto golden toasted sourdough for a breakfast that is hearty without becoming unnecessarily complicated.
The sourdough brings the chew, the eggs bring the comfort, the bacon brings the crunch, and the avocado quietly convinces you this was all very responsible.
🍳 Sourdough Breakfast Sandwich
Fluffy eggs, crispy bacon, melted cheese, avocado, tomato, and toasted sourdough.
🥪 Ingredients
- 4 thick slices sourdough bread
- 4 large eggs
- 4 slices bacon
- 2 slices cheddar, Monterey Jack, or provolone cheese
- 1/2 ripe avocado, sliced
- 4 slices ripe tomato
- 1 tablespoon milk or cream, optional
- 1 tablespoon butter, divided
- 1 tablespoon mayonnaise or hot sauce, optional
- 1/2 teaspoon kosher salt, divided
- 1/4 teaspoon freshly ground black pepper
🔥 How to Make It
-
Cook the bacon.
Cook the bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate and set aside. -
Whisk the eggs.
Crack the eggs into a bowl and whisk with the milk or cream if using, plus a pinch of salt and black pepper. -
Cook the eggs gently.
Melt half the butter in a nonstick skillet over medium-low heat. Add the eggs and stir gently until soft, fluffy, and just set. Remove them before they become dry and start regretting everything. -
Add the cheese.
Divide the eggs into two portions and top each with a slice of cheese. Cover the skillet briefly or let the residual heat soften the cheese. -
Toast the sourdough.
Use the remaining butter to toast the sourdough in a skillet until golden and crisp around the edges. -
Add the spreads.
Spread mayonnaise, hot sauce, or both over the toasted sourdough if desired. -
Build the sandwiches.
Layer the eggs and cheese, crispy bacon, avocado, and tomato onto two slices of toasted sourdough. -
Close and serve.
Top with the remaining sourdough, press gently, slice, and serve immediately while the eggs are warm and the cheese is still melty.
🍳 Don't Overcook the Eggs
The eggs are one of the main textures in this sandwich, so keep them soft.
Cook them over medium-low heat and remove them while they still look slightly glossy. Residual heat will finish the job.
Dry scrambled eggs can turn a great breakfast sandwich into something that requires a beverage every two bites.
🍞 Why Sourdough Works for Breakfast Sandwiches
Eggs, bacon, cheese, and avocado are all rich ingredients.
Sourdough brings a little tang and chew to the sandwich, which keeps the whole thing from tasting flat or overly heavy.
Toasting the bread also gives it enough structure to hold soft eggs, creamy avocado, juicy tomato, and melted cheese without folding under pressure.
Breakfast is already asking enough from you. Your bread should be dependable.
🏆 Four Ways to Make It Better
🥓 Cook the Bacon Crisp
Crispy bacon gives you the crunch that soft eggs and avocado need. Floppy bacon has other uses. This is not one of them.
🍳 Keep the Eggs Soft
Gentle heat gives you creamy, tender eggs that sit beautifully inside the sandwich instead of bouncing out in dry chunks.
🥑 Use Ripe Avocado
You want creamy slices that hold their shape, not an avocado that is either rock hard or already halfway to guacamole.
🍞 Toast the Bread Properly
Golden sourdough adds texture and creates enough structure to hold all that breakfast business together.
🤤 Breakfast Sandwich Variations
Once eggs and sourdough are involved, breakfast gives you a lot of room to improvise.
- Swap bacon for breakfast sausage
- Add pepper jack cheese for heat
- Add caramelized onions
- Add sautéed spinach
- Add pickled jalapeños
- Add pesto instead of mayonnaise
- Add a fried egg instead of scrambled eggs
- Add hot honey or your favorite hot sauce
