Ultimate Sourdough Grilled Cheese
Crispy, golden sourdough on the outside. Ridiculously gooey melted cheese on the inside. This is the kind of grilled cheese that makes you wonder why you ever accepted sad sandwich bread as an option.
A grilled cheese sandwich sounds simple because it is simple. But simple food has nowhere to hide.
Good bread matters. Good cheese matters. And when that bread happens to be tangy, chewy sourdough with edges that crisp like they have something to prove, grilled cheese gets very serious very quickly.
This version combines sharp cheddar with Gruyère for bold flavor, ridiculous meltability, and exactly the kind of cheese pull that makes a perfectly reasonable adult hold half a sandwich three feet away from the other half.

🥪 Ingredients
- 2 thick slices sourdough bread
- 1 tablespoon softened butter, plus more if needed
- 2 ounces sharp cheddar cheese, freshly grated
- 2 ounces Gruyère cheese, freshly grated
- 1 teaspoon Dijon mustard, optional
🔥 How to Make It

Butter the bread.
Spread softened butter evenly over one side of each slice of sourdough. Get close to the edges because nobody asked for an almost-crispy grilled cheese. -
Build your sandwich.
Place one slice butter-side down. If using Dijon, spread it lightly over the inside of the bread. Add the cheddar and Gruyère, then place the second slice on top with the buttered side facing out. -
Start low and slow.
Heat a skillet over medium-low heat. Add the sandwich and cook for about 3–5 minutes until the bottom is deeply golden and crispy. -
Flip carefully.
Turn the sandwich over and cook for another 3–5 minutes. Lower the heat if the bread is browning faster than the cheese is melting. -
Finish the melt.
If necessary, cover the skillet for 30–60 seconds. The trapped heat helps finish melting the cheese without burning the bread. -
Rest and slice.
Transfer to a cutting board and let the sandwich rest for about one minute before slicing.

Don't crank the heat.
Sourdough develops a beautiful crust quickly. If the skillet is too hot, you'll end up with gorgeous toasted bread surrounding cheese that is still considering whether it wants to participate.
Medium-low heat gives the cheese time to melt completely while the sourdough slowly develops that deep golden crunch.
