What Happens If You Cold Ferment Sourdough for 72 Hours?

One night was normal. Two nights was an experiment. Three nights means the sourdough is basically renting space in the refrigerator.

A sourdough loaf may tolerate a 72-hour refrigerated cold ferment if the dough enters the refrigerator at an appropriate fermentation stage and the refrigerator is sufficiently cold. But 72 hours pushes the process farther than a typical overnight proof and increases the risk of over-proofing, structural weakening and reduced oven spring. Flavor and acidity may also change. A three-day cold ferment is possible under the right conditions—but it is not automatically better.

Extending the refrigerated proof to 72 hours should continue moving the dough through its overall fermentation timeline, although much more slowly than at room temperature. The longer duration may change flavor and acidity while increasing the possibility that the dough becomes over-proofed or structurally weaker.

The dough formula, bulk fermentation and shaping remain the same. The primary variable is the 72-hour refrigerated final proof.

For the clearest comparison, imagine three identical loaves.

Same starter. Same flour. Same hydration. Same salt. Same dough temperature. Same bulk fermentation. Same shaping.

Only the refrigerator time changes.

When we finally open the refrigerator, the loaf is still very cold.

Assuming it has been covered properly, it may still look surprisingly normal.

This is the moment when you begin thinking:

“Have we been baking sourdough too soon our entire lives?”

Not so fast.

The dough has spent an additional 24 hours moving slowly through fermentation compared with our 48-hour loaf.

Whether that produces an interesting loaf or an over-proofed one depends heavily on how cold the dough stayed and how fermented it was before refrigeration.

❄️ Three Days Cold Does Not Mean Three Days Paused

The most important lesson from Experiments #12, #13 and #14 is that refrigeration is not suspended animation.

Cold temperatures slow sourdough fermentation.

They do not necessarily stop it.

The loaf continues changing throughout an extended refrigerated proof.

That means:

24 hours ≠ 48 hours ≠ 72 hours.

Every additional day extends the fermentation process.

🚨 At 72 Hours, Refrigerator Temperature Becomes Critical

This was important at 48 hours.

At 72 hours, it becomes even more important.

Two refrigerators labeled “cold” can maintain different temperatures.

A dough held in a very cold refrigerator may progress much more slowly than dough in a refrigerator that runs several degrees warmer.

Over a short period, that difference may be manageable.

Over three days, the effects accumulate.

So if someone says:

“I always cold ferment for 72 hours and it works perfectly.”

That tells you what works with their formula, their dough and their refrigerator.

It doesn't automatically tell you what will happen in yours.

🕸️ What Happens to Dough Strength?

This is where the experiment becomes especially interesting.

Fermentation continues altering the dough over time.

Acids accumulate.

Enzymatic processes continue.

The gluten network continues experiencing the effects of fermentation.

A dough that is well balanced may still retain excellent structure after an extended cold proof.

But if fermentation progresses too far, the dough can become increasingly fragile.

Eventually the question changes from:

“How much more flavor can we develop?”

to:

“Does this loaf still have enough structure left to stand up?”

No single symptom proves that the cold ferment went too far.

But several clues together can indicate the dough has progressed beyond its ideal proofing window.

The loaf loses shape rapidly when removed from the proofing basket.

The dough feels fragile or lacks the tension expected from a strong chilled loaf.

📉 Limited Oven Spring

The loaf expands less than expected despite being properly scored and baked.

🔪 Weak Score Opening

The score may open only modestly because the dough has less remaining expansion potential.

👅 Does 72 Hours Make Sourdough Much More Sour?

It may produce a more pronounced or different flavor.

But again:

72 hours does not come with a guaranteed sourness setting.

Sourdough acidity and flavor are influenced by the entire fermentation system.

  • Starter maturity.
  • Starter feeding schedule.
  • Starter percentage.
  • Flour.
  • Hydration.
  • Bulk fermentation.
  • Dough temperature.
  • Refrigerator temperature.
  • Cold-fermentation duration.

The extra refrigerated time allows fermentation-related biochemical changes to continue, so the flavor may become noticeably different from an overnight loaf.

Whether you prefer that flavor is another experiment entirely.

🔪 What Is 72-Hour Dough Like to Score?

If the loaf has remained sufficiently cold, the surface may feel very firm.

That can make scoring wonderfully easy.

But there is an important trap here.

Cold temperature temporarily makes dough firmer.

That firmness can hide the fact that fermentation has progressed too far.

A loaf may score beautifully...

then spread or produce disappointing oven spring once it begins heating.

So:

easy scoring does not prove perfect fermentation.

🔥 What Happens to Oven Spring?

This is one of the best ways to see whether the dough retained sufficient structure and expansion potential.

✅ Well Managed

If the dough entered refrigeration at an appropriate stage and remained sufficiently cold, it may still produce good oven spring after 72 hours.

⚠️ Too Far Fermented

If the extended proof pushes fermentation beyond the dough's useful window, oven spring may decrease and the loaf may spread more.

The longer the experiment runs, the narrower the margin for error can become.

🍞 What Happens to the Crumb?

There is no single “72-hour crumb.”

If fermentation remains balanced, the loaf may still produce a beautiful, well-aerated interior.

If the dough becomes over-proofed, however, the crumb can reflect the loss of structure and reduced expansion during baking.

This is why long cold fermentation should not be used simply as a shortcut to “better crumb.”

The crumb is the result of:

the entire fermentation process—not one impressive number of refrigerator hours.

🌬️ Watch Out for Surface Drying

Three days is also plenty of time for an uncovered loaf to lose moisture from its surface.

If the dough is poorly covered, a dry skin can form.

That may interfere with scoring and expansion.

For extended cold fermentation, protect the dough from excessive airflow and drying.

The experiment is supposed to test fermentation.

Not whether your refrigerator can turn sourdough into leather.

🚨 I Forgot My Sourdough in the Fridge for Three Days. Now What?

Do not automatically throw it away.

Three days does not guarantee failure.

  • Keep it cold. There's generally no reason to warm a long-cold-fermented loaf before evaluating and baking it.
  • Turn it out carefully. See whether it maintains reasonable structure.
  • Score it while cold. Cold dough is typically easier to score cleanly.
  • Bake it. The oven will reveal whether the loaf retained useful expansion potential.
  • If it spreads: don't assume the entire experiment was worthless. Observe the crumb, flavor and crust too.
  • Write down your refrigerator temperature and process. Those details make the result useful for future bakes.

Worst-case scenario?

You learn something.

And probably make toast.

🤔 Is a 72-Hour Cold Ferment Better?

Not necessarily.

Longer fermentation is not automatically superior fermentation.

If you enjoy the flavor and the dough performs well, a 72-hour cold ferment may be useful.

If your overnight loaf already has excellent flavor, crumb and oven spring, there is no requirement to turn bread making into an endurance event.

The useful question isn't:

“How long can I possibly ferment this?”

It's:

“Which fermentation schedule gives me the bread I actually want?”

🔬 The Science Behind the Experiment

Refrigeration substantially slows the metabolism of sourdough yeasts and lactic acid bacteria, but microbial and enzymatic processes can continue.

The dough also requires time to cool after entering the refrigerator, so fermentation may remain relatively active during the early portion of the cold proof.

Over 72 hours, even slow processes have considerable time to influence the dough.

Acidity can continue changing. Fermentation products continue developing. Enzymatic processes continue modifying dough components.

If these changes remain balanced with the dough's structural strength, the loaf can still bake successfully.

If fermentation progresses too far, however, the dough may lose some of its ability to retain gas and expand strongly in the oven.

Cold buys time. It does not create unlimited time.

Yes, sourdough may be able to cold ferment for 72 hours.

But a three-day refrigerated proof is much more dependent on dough condition, starter percentage and actual refrigerator temperature than a typical overnight cold ferment.

The extended time can alter flavor and acidity, while also increasing the risk of over-proofing, weakened structure and reduced oven spring.

A successful 72-hour loaf can be excellent.

But 72 hours isn't automatically better than 48 hours—or overnight.

The lesson from Experiment #14: the longer you cold ferment, the more important fermentation control becomes.
