What Happens If You Cold Ferment Sourdough for 48 Hours?
One night in the refrigerator is normal. Two nights? Now we're officially ignoring the dough in the name of science.

A healthy, appropriately fermented sourdough loaf can often tolerate a 48-hour refrigerated cold ferment, provided the refrigerator is sufficiently cold and the dough did not enter the fridge already too far proofed. The additional time can change flavor, acidity, crust characteristics and dough handling. But 48 hours is not automatically better than an overnight proof, and warmer refrigerators or already advanced dough can push the loaf toward over-proofing.

The first surprise is that the dough doesn't necessarily emerge from the refrigerator destroyed.

It's cold. It's firm. And assuming the fermentation was managed appropriately before refrigeration, it may still hold its shape beautifully.
But the 48 hours were not meaningless.
Fermentation didn't simply disappear when we closed the refrigerator door.
The clock slowed dramatically—but it kept moving.

That means two loaves placed in two different refrigerators can behave differently over 48 hours.
🚨 Your Refrigerator Temperature Matters—a Lot
“Cold ferment for 48 hours” sounds like a complete instruction.
It isn't.
A colder refrigerator will generally slow fermentation more strongly than a warmer refrigerator.
If your refrigerator runs relatively warm, the dough may continue progressing more rapidly than expected.
And if the dough entered the refrigerator already near the end of its ideal proofing window, 48 additional hours may be too much.
So the real experiment isn't simply:
48 hours.
It's:
48 hours + refrigerator temperature + dough condition going into the refrigerator.

Imagine putting warm leftovers into the refrigerator.
They don't become refrigerator-cold in thirty seconds.
Bread dough doesn't either.
The center of a shaped loaf takes time to cool.
During that cooling period, microorganisms remain more active than they will be once the dough is fully chilled.
This means the fermentation stage at which you refrigerate the dough matters.
A loaf placed into the refrigerator relatively early has more fermentation room than one that enters already heavily proofed.

But the internet-friendly equation:
more refrigerator time = automatically more sour
is too simple.
Sourdough flavor depends on many interacting variables:

- Flour type.

- The microbial community in the starter.
An extended cold proof provides more time for biochemical and microbial processes to influence flavor.
So a 48-hour loaf may taste noticeably different from an overnight loaf, but the exact flavor change won't be identical in every kitchen.
🔪 What Happens When You Score 48-Hour Dough?
One potential advantage is handling.
Thoroughly chilled dough is generally firm.
That can make scoring extremely satisfying.
The razor moves through the surface cleanly.
The loaf holds still.
For approximately twelve glorious seconds, you feel like a professional baker.
But firm dough does not automatically mean properly proofed dough.
Temperature can make dough feel structurally firm even when fermentation has progressed farther than ideal.
So scoring behavior alone cannot tell you whether the loaf is perfectly fermented.
🔥 What Happens to Oven Spring?
A well-managed 48-hour cold ferment can still produce strong oven spring.
But extending the cold proof increases the importance of what happened before refrigeration.
✅ If Fermentation Is Well Managed
The dough may retain sufficient structure and expansion potential to produce excellent oven spring after 48 hours.
⚠️ If Fermentation Goes Too Far
The dough may have less remaining expansion potential and weakened structure, resulting in reduced oven spring.
The refrigerator slows the process.
It doesn't make the loaf immune to over-proofing.
🍞 What About the Crumb?
A 48-hour cold ferment does not guarantee either an open crumb or a dense crumb.
Crumb still depends on the entire fermentation and dough-development process.
If the dough entered refrigeration appropriately fermented and retained good structure, the finished crumb can remain beautifully aerated.
If the extended proof pushes the dough too far, the crumb and loaf volume can begin reflecting over-proofing and structural weakening.
Once again:
time is a variable—not a quality score.
🥖 What Happens to the Crust?
Extended refrigeration can also affect the surface of the dough.
Depending on how the loaf is covered, some surface drying can occur.
A slightly drier surface can influence scoring and crust development.
Too much exposure, however, can create an undesirable dry skin.
For a long cold ferment, keeping the dough appropriately covered is especially important.

🚨 I Forgot My Sourdough in the Fridge for Two Days. What Should I Do?
First: don't automatically throw it away.
Forty-eight hours in the refrigerator does not automatically mean the loaf is ruined.
- Look at the dough. Has it expanded dramatically or does it still appear structurally sound?
- Check its shape. Does it still hold itself when turned out of the basket?
- Score it while cold. There is usually no need to warm a long-cold-fermented loaf before baking.
- Bake it. The oven will tell you far more than staring at the banneton for another hour.
- Record the result. If it performs beautifully, you just discovered that your formula and refrigerator can tolerate a longer cold proof.
If the loaf has clearly gone too far, bake it anyway.
A less-than-perfect loaf is still useful data.
And frequently still excellent toast.
🧪 Is 48 Hours Better Than Overnight?
Not automatically.
This is an important Experiment Lab rule:
more extreme does not mean more advanced.
A 48-hour cold ferment is useful if it improves your schedule or produces characteristics you enjoy.
But there is no sourdough medal awarded for keeping dough in the refrigerator longer.
If your overnight loaf has the flavor, structure and crust you want, you don't need to extend it just because somebody on social media fermented theirs for two days.

Refrigeration slows the metabolic activity of sourdough yeasts and lactic acid bacteria, but fermentation does not necessarily stop completely.

Longer cold fermentation also increases the opportunity for the dough to move toward over-proofing.
