Why Does My Sourdough Starter Have Liquid on Top?

You open your starter and there's a mysterious layer of liquid sitting on top. Don't panic. Here's what that liquid usually means and what to do next.

💧 The Short Answer

Liquid on top of sourdough starter is often a sign that the starter has become hungry and needs feeding.

It can happen when the starter has been sitting for a while or when fermentation has progressed beyond its most active stage.

💧 What Is That Liquid?

The liquid that collects on top of sourdough starter is commonly called hooch.

It can range in color from clear to grayish or even slightly darker, depending on the starter and how long it has been sitting.

Hooch usually means your starter is hungry. It doesn't automatically mean your starter has gone bad.

🍽️ Why Does Hooch Form?

Your starter is constantly consuming the available food supplied by flour. As fermentation continues, that food eventually becomes less available.

It's Been Too Long Your starter may simply have gone longer than usual between feedings.
🌡️ Warm Conditions Warmer conditions can speed fermentation and cause the starter to consume its food more quickly.
🥣 Feeding Routine A feeding schedule that doesn't provide enough food for your starter's activity can contribute to separation.
❄️ Storage Refrigerated starter can also develop a layer of liquid during longer periods between feedings.

🥄 What Should You Do When You See Liquid?

If your starter otherwise looks normal, the next step is usually to return to your normal feeding routine.

  • Check how long it has been since the last feeding.
  • Consider whether your starter has been unusually warm or active.
  • Feed your starter according to your normal routine.
  • Give it time to respond and become active again.
  • Watch for bubbles and a predictable rise after feeding.
Don't judge your starter by the liquid alone. Look at the smell, appearance and activity of the starter as a whole.

🥣 Should You Pour the Liquid Off or Stir It In?

You'll find different opinions among sourdough bakers about whether to pour off hooch or stir it back into the starter.

The important thing is understanding why the liquid appeared in the first place: your starter has likely gone through a period of fermentation without enough fresh food.

Focus on getting your feeding routine back on track rather than treating the liquid itself as a disaster.

⚠️ When Is Liquid a Reason to Investigate Further?

Liquid by itself isn't necessarily a reason to throw out your starter. But if you notice other unusual changes at the same time, take a closer look.

Look at the entire starter, not just the liquid. If you see unusual visible growth, dramatic discoloration or other significant changes that don't resemble normal fermentation, don't assume the liquid is the only issue.

🐿️ How Can You Prevent Excessive Hooch?

The simplest solution is learning your starter's rhythm.

Once you understand how quickly your starter consumes its food under your normal conditions, you can adjust your feeding routine accordingly.

  • Keep track of when you feed your starter.
  • Pay attention to how quickly it rises.
  • Notice when it begins to fall again.
  • Adjust your routine when temperature changes.
