Quick test: Put a thermometer next to your starter. If it's under 70°F, that's why it won't double.

How To Warm It Up In 3 Steps
Oven with light on and door cracked (check with thermometer — must stay under 85°F). Top of fridge, near router, or microwave with mug of hot water.
Put towel or cutting board under jar. Granite and stone suck heat. Wrap jar in towel if needed.
25g starter + 50g unbleached + 10g rye + 60g warm (80°F) filtered water. Should double in 4-8 hrs when warm.
Cold is why your starter takes 24 hrs. Warm spot + mature culture = 4-8 hr double even in winter.
People Also Ask
What temp should sourdough starter be to rise?
75-80°F ideal to double in 4-8 hours. Below 70°F it slows way down. Below 65°F it may not double at all. Above 85°F makes it too acidic.
How do I keep starter warm in cold house?
Oven with light on, top of fridge, seedling heat mat on low with towel, insulated cooler with jar of warm water, or proofing box. Always check with thermometer.
Can I put sourdough starter in oven?
Yes, with ONLY the light on, door cracked, and thermometer inside. Must stay 75-80°F. Many ovens with light on hit 90°F+ which is too hot.
Will cold kill my sourdough starter?
No, cold just slows it. Fridge at 38°F puts it to sleep for weeks. Heat over 95°F kills it. Cold kitchen won't kill it, just stops it from rising.
