What Happens If You Forget to Feed Your Sourdough Starter?
You walked past the jar yesterday and thought, βI'll feed that later.β Then later became tomorrow. Welcome to Experiment #03.

Forgetting one feeding usually does not mean you've killed an established, healthy sourdough starter. As the available food is consumed, the starter becomes increasingly hungry and acidic. It may peak, collapse, smell sharper and eventually become sluggish. A neglected but otherwise healthy starter can often recover with appropriate fresh feedings.

How fragile is sourdough starter really?
If you've ever forgotten a feeding, you've probably approached the jar the next morning expecting to find a tiny microbial crime scene.
Instead, you may find a collapsed starter, a stronger smell, liquid on the surface or something that simply looks considerably less enthusiastic than it did yesterday.
So we're testing what happens when an established starter finishes its food... and we deliberately don't give it more.
π¬ Our Hypothesis
The starter should continue fermenting until much of its readily available food has been consumed. It should then become increasingly acidic and less visibly active, but short-term neglect should not automatically destroy an established culture.
π§« The Variable
Everything remains normal except the feeding schedule. Instead of refreshing the starter after its normal cycle, we leave it unfed.

We begin with a healthy, established starter that has been fed normally.
Control Starter
- Feed the starter normally.
- Allow it to rise and peak.
- Refresh it again according to its normal maintenance schedule.
- Continue the cycle.

- Feed the starter exactly the same way.
- Allow it to rise and peak.
- Do not feed it again.
- Continue observing the starter as it sits beyond its normal feeding window.
No dramatic interventions.
No emergency flour avalanche.
We're simply letting the starter get hungry.
β±οΈ What Happens as the Starter Sits?
There isn't a universal hour-by-hour schedule because starter behavior depends heavily on temperature, feeding ratio, flour, hydration and the condition of the culture.
But the general progression looks something like this:
π«§ Stage 1: Active Fermentation
After feeding, the starter begins fermenting normally. Bubbles develop, gas accumulates and the starter expands.
π Stage 2: Peak
The starter reaches or approaches its maximum expansion. This is often the activity window bakers watch for when preparing to make bread.
π Stage 3: Collapse
Gas production and retention can no longer maintain the starter's maximum height. The surface flattens and the starter begins falling.
π΄ Stage 4: Hungry Starter
As fermentation continues without fresh flour, the starter becomes increasingly depleted and acidic. Visible activity may become much less dramatic.
π¬ What Happens?
The forgotten starter doesn't suddenly stop being sourdough starter when it misses dinner.
The microorganisms continue metabolizing available nutrients while fermentation products, including organic acids, accumulate.
The starter rises, peaks and eventually falls. Its aroma may become noticeably sharper or more alcoholic. Depending on the conditions, liquid may also appear on or within the culture.
As the period without fresh food continues, the starter can become increasingly sluggish.
In other words: the jar isn't necessarily dead. It's increasingly hungry.
π Why Does a Hungry Starter Smell Different?
A starter's aroma changes throughout its fermentation cycle.
Soon after feeding, it may smell relatively mild and floury. As fermentation progresses, acids and other fermentation compounds accumulate.
An overdue starter can therefore develop much stronger aromas. Depending on the culture and conditions, people describe hungry starter as smelling sour, sharp, vinegary, alcoholic or similar to acetone.
Those aromas can be alarming when you're accustomed to smelling the starter near peak, but aroma alone doesn't tell you that the culture has died.
π§ What About Liquid on Top?
A neglected starter may sometimes develop a layer of liquid commonly called hooch.
Hooch is associated with a starter that has gone well beyond its normal feeding cycle. Its appearance is another clue that the culture would benefit from fresh food.
It can look dramatic.
The starter has not necessarily written its final will and testament.
π§ Why Doesn't Missing One Feeding Usually Kill It?
Established sourdough cultures are microbial communities adapted to repeated cycles of feeding and fermentation.
As food becomes depleted, environmental conditions inside the starter change. Acidity increases and microbial activity can slow.
That is very different from saying every organism immediately dies when the feeding clock expires.
This resilience is one reason mature starters can often recover from ordinary scheduling mistakes.
But there's an important distinction between missing a feeding and severe prolonged neglect.
π¨ Hungry Is Not the Same as Contaminated
Some changes can be normal signs of an overdue starter. Others should not simply be dismissed as hunger.
Use more caution if you see signs such as:
- Visible fuzzy mold growth.
- Pink or orange discoloration.
- Other unusual colored growth that appears inconsistent with normal starter fermentation.
Those are different from an ordinary collapsed starter, strong sour aroma or typical hooch. When contamination is suspected, don't simply assume another feeding will solve everything.
π¨ I Forgot to Feed My Starter. What Should I Do?
For an established starter that simply missed its normal feeding and shows no concerning signs of contamination:
- Don't panic. A missed feeding is extremely different from automatically losing the culture.
- Reduce it to the amount you normally maintain. There's generally no reason to keep an enormous quantity just because it became hungry.
- Give it an appropriate fresh feeding. Use your normal flour, water and feeding ratio.
- Watch its behavior. Look for bubbles, expansion, rise and the return of its normal fermentation cycle.
- Give it additional feeding cycles if necessary. A starter that has been neglected longer may need repeated appropriate refreshments before returning to its usual strength.
π€ Should You Feed It Again Immediately If It Doesn't Rise?
Not necessarily.
This is where rescuing starter can become accidentally counterproductive.
You feed the neglected starter.
Two hours later it hasn't doubled.
So you feed it again.
Then three hours later you feed it again because the internet has made you nervous.
Repeatedly refreshing a starter before it has had time to progress through fermentation can make it harder to judge whether the culture is actually recovering.
After feeding, give the starter appropriate time to respond while considering room temperature, feeding ratio and the condition it was in before the feeding.
βοΈ What If I Don't Want to Feed Starter Every Day?
You don't necessarily have to.
For established starters that aren't being used every day, refrigeration is commonly used to slow fermentation and reduce the frequency of maintenance feedings.
Cold temperatures don't stop fermentation completely, but they slow microbial activity considerably.
That means the refrigerator can be extremely useful when your baking schedule is more βmaybe Saturdayβ than βfresh bread every morning at dawn.β
π¬ The Science Behind the Experiment
Sourdough starter contains communities of yeasts and lactic acid bacteria that metabolize nutrients supplied by flour.
After a feeding, microbial activity increases as the organisms utilize available substrates. Yeasts contribute carbon dioxide and fermentation products, while lactic acid bacteria produce organic acids that help create sourdough's characteristic acidic environment.
As fermentation progresses without another refreshment, easily available nutrients decline while metabolic products accumulate.
Eventually, the culture moves farther away from the freshly fed conditions in which we normally observe vigorous expansion.
Fresh feeding changes that environment again by introducing new flour, water and nutrients.
π§ͺ Experiment #03 Result
Forgetting one feeding generally doesn't mean you've killed an established sourdough starter.
The starter will continue through its fermentation cycle, peak, fall and become increasingly hungry and acidic as it sits without fresh food.
Short-term neglect is often recoverable with appropriate feeding. Longer neglect may require additional feeding cycles before the culture behaves normally again.
And if you see genuine signs of contamination, that's a different situation entirely.
The lesson from Experiment #03: a collapsed hungry starter and a dead starter are not the same thing.
