Then you cut into it.
And the middle is gummy.
Not soft.

Gummy.

So now you're standing in your kitchen staring at this beautiful loaf wondering what happened.
Here's the good news:
Your sourdough probably isn't broken.
It's actually trying to tell you something.
Your Crumb Is Basically a Snitch
One of the best things about sourdough is that the finished loaf leaves clues.
A dense loaf tells you something.
A flat loaf tells you something.
And a gummy loaf definitely has something to say.
Usually, we're looking at a few suspects: your starter, fermentation, baking time, hydration, or the person who couldn't wait long enough to cut the bread.
You know who that person is.
It's probably you.
First Suspect: You Cut It Too Soon
This is the easiest mistake to make because nobody wants to wait.
Your loaf comes out of the oven and the whole house smells incredible. The crust is crackling. Steam is escaping. You can practically hear the bread calling your name.
And apparently you're supposed to ignore it.
Sourdough continues to set as it cools, so slicing into a piping-hot loaf can leave you with a crumb that's wetter and stickier than it should be.

If your loaf is still hot enough to burn your fingertips, put the knife down.
Go make coffee.
Take a shower.
Stare dramatically out the window.
Leave the bread alone.
Then There's the "It Looked Done" Problem
This one gets a lot of people.
Your loaf can have a beautiful brown crust while the center still needs more time.
The outside is sitting there looking like a bakery masterpiece while the middle is quietly refusing to cooperate.
If your sourdough consistently has a gummy center, especially when the crust looks completely finished, your loaf may simply need more time in the oven.
In other words, don't let a gorgeous crust fool you.
Your Starter Might Be Having an Identity Crisis
Here's another big one.
Your sourdough starter isn't just flour and water sitting in a jar looking decorative.
It's doing the heavy lifting.
A healthy starter should be active after feeding, with plenty of bubbles and a noticeable rise. If yours barely moves, takes forever to wake up, or seems to be permanently contemplating its existence, your dough isn't exactly starting the race with a full tank of gas.
And when your starter isn't strong enough, fermentation can suffer.
That's when you can end up with bread that's dense, flat, heavy and, yes, sometimes gummy.
Your starter is the engine.
If the engine is coughing, don't expect the loaf to win the race.
Then We Have Fermentation
This is where sourdough starts getting interesting.
Your recipe might say, "Let the dough rise for six hours."
Your dough does not care.
Six hours in a warm kitchen and six hours in a cold kitchen are not remotely the same thing.
Starter strength, dough temperature, flour, hydration and your environment all affect how quickly fermentation happens.
That's why experienced sourdough bakers learn to watch the dough instead of blindly obeying the clock.
If your dough still looks dense and lifeless, giving it exactly six hours because a recipe told you to isn't going to magically make it ready.
Your dough isn't reading the recipe.
It's doing its own thing.
And Please Don't Blame the Bread for Your Hydration Ambitions
We also need to talk about high-hydration sourdough.
You see those beautiful loaves online with enormous holes and think, "I want that."
So you add more water.
And suddenly your dough has the structural integrity of a wet towel.
High-hydration dough can make incredible bread, but it also demands more from your flour, gluten development, fermentation and technique.
If you're still learning, you don't need to start by chasing the biggest hole on Instagram.
You need bread that actually works.
So What Do You Actually Do?
Don't change everything at once.
That's how you end up with a completely different loaf and absolutely no idea which change actually fixed the problem.
Instead, start with the obvious suspects:
- Make sure your starter is genuinely active.
- Watch the dough instead of relying entirely on the clock.
- Make sure the loaf is fully baked.
- Let the bread cool properly before slicing.
- If you're newer to sourdough, don't go crazy with hydration.
That's really it.
You don't need a bread exorcism.
You need to figure out what your loaf is telling you.
