If regular sourdough is good, adding sharp cheddar and fresh jalapeños makes it downright dangerous.
This Jalapeño Cheddar Sourdough Bread combines a crisp, deeply golden crust with a soft, chewy sourdough crumb, pockets of melted cheddar and little bursts of fresh jalapeño heat.

The dough follows a straightforward stretch-and-fold process, a short room-temperature bulk fermentation, and an overnight cold ferment that develops flavor while making the loaf easier to score and bake.

🌾 Ingredients
The Dough
- 100 g active sourdough starter
- 500 g bread flour
- 350 g water
- 10 g fine sea salt
The Good Stuff
- 100–125 g sharp cheddar cheese, cut into small cubes
- 1–2 fresh jalapeños, finely sliced
- 1 extra jalapeño, optional for more heat
- 1–2 tbsp flour, for tossing the cheese
🧀 Why Cubed Cheddar?
Cubed cheddar creates beautiful melted cheese pockets throughout the loaf.
Shredded cheese melts much faster and can disappear into the dough.

1. Get Your Starter Ready
Your starter should be active, bubbly and at or near its peak.
A good starter should:
- Rise noticeably after feeding
- Look bubbly throughout
- Have a pleasant tangy smell
- Be capable of doubling or more in size
Don't stress about the float test. A lively, rising starter is a much better indicator that your starter is ready to bake.
2. Mix the Dough
Add 350 g water and 100 g active sourdough starter to a large mixing bowl.
Stir until the starter is mostly dispersed.
Add 500 g bread flour.
Mix until there are no dry patches of flour remaining.
The dough may look rough at this point.
That's completely normal.
3. Rest the Dough
30 MINUTES
Cover the bowl and let the dough rest for approximately 30 minutes.
This short rest allows the flour to hydrate and makes the dough noticeably easier to work with.
4. Add the Salt
Sprinkle 10 g fine sea salt over the dough.
Wet your hands and gently squeeze, fold and pinch the dough until the salt is fully incorporated.
The dough may feel sticky.
Don't start dumping flour into the bowl just because the dough feels sticky. This is a naturally soft sourdough dough.
5. Build Strength With Stretch & Folds
Perform 4 rounds of stretch-and-folds, approximately 30 minutes apart.
🔄 How to Stretch & Fold
- Wet your hand lightly.
- Grab one side of the dough.
- Stretch it gently upward.
- Fold it over the center.
- Rotate the bowl.
- Repeat around all four sides.
Cover the dough between each round.
By the final round, your dough should feel:
- Stronger
- Smoother
- More elastic
- Less sticky
- Better able to hold its shape
You don't need to beat the dough into submission. Time, fermentation and gentle handling build sourdough strength.
6. Add the Jalapeños & Cheddar
Now things get serious.
Toss the cubed cheddar with a small amount of flour.
This helps prevent the cheese pieces from clumping together.
Gently stretch the dough.
Scatter approximately half of the cheese and jalapeños over the dough.
Fold the dough over the filling.
Add the remaining cheese and jalapeños and fold again.
You're distributing the filling — not kneading it into oblivion.
7. Bulk Fermentation — 2–4 Hours
Once your stretch-and-folds and filling have been incorporated, cover the bowl and let the dough continue fermenting at room temperature for approximately 2–4 hours.
This is the updated bulk fermentation timing for this recipe.
Watch the dough rather than blindly following the clock.
You're looking for:
- A noticeably larger dough
- Bubbles around the edges
- A smoother, puffier appearance
- A soft, jiggly texture
- A noticeable increase in volume
A warm kitchen will speed up fermentation. A cool kitchen will slow it down. The 2–4 hour range is a guide — your dough's appearance and texture are the final indicators.
Your dough does not need to double during bulk fermentation.
8. Pre-Shape
Lightly flour your work surface.
Gently turn the dough out of the bowl.
Try not to destroy all those beautiful fermentation bubbles.
Shape the dough into a loose round.
Let it rest uncovered for approximately 15–20 minutes.
This gives the gluten time to relax before final shaping.
9. Final Shape
Lightly flour the top of the dough and flip it over.
Fold the bottom toward the center, fold the sides inward, then roll or fold the dough toward the top to create surface tension.
Flip it seam-side down.
Use your hands or a bench scraper to gently drag the dough toward you across the counter.
Rotate and repeat until the outer surface feels smooth and tight.
Good surface tension helps the loaf rise upward instead of spreading sideways.
10. Into the Banneton
Place the shaped dough seam-side up into a well-floured banneton.
No banneton? A bowl lined with a heavily floured kitchen towel works too.
Cover the dough well.
Now comes the overnight magic.
11. Cold Fermentation — 8–16 Hours
Place the covered dough directly into the refrigerator.
8–16 HOURS
Overnight is perfect.
Cold fermentation develops:
- More flavor
- Better structure
- A deeper sourdough character
- Easier scoring
- Better oven spring
You get to go to bed while your bread develops flavor.
12. Preheat Your Dutch Oven
450°F / 232°C
Place your Dutch oven inside the oven and allow it to heat for at least 30–45 minutes.
Don't skip this step.
A properly heated Dutch oven gives your dough the immediate blast of heat it needs for beautiful oven spring.
13. Score Your Loaf
Take the dough directly from the refrigerator.
Turn it onto a piece of parchment paper.
Dust away excess flour if needed.
Use a bread lame or very sharp knife to score the loaf.
Easy Beginner Score
Make one confident cut approximately ½ inch deep across the top.
Want to get fancy? Add a few decorative cuts around your main score.
Cold dough is firmer and easier to score cleanly. Another reason the overnight refrigerator ferment is so helpful.
14. Bake
Carefully lower the dough into your screaming-hot Dutch oven.
Covered Bake
450°F / 232°C — 28 minutes
Bake with the lid on.
Uncovered Bake
Remove the lid and reduce the oven temperature to:
425°F / 218°C
Continue baking for approximately 10–15 minutes uncovered.
You're looking for a deeply golden-brown crust.
Dark golden brown means flavor. Especially when cheddar is involved.
15. 🌡️ LET IT COOL!
This is the hardest step.
I know.
You smell melted cheddar.
You can see the jalapeño.
You want bread.
WAIT AT LEAST 1 HOUR.
Let the loaf cool before slicing.
The interior continues setting as the bread cools. Cutting too early can result in a gummy crumb.
Patience now. Cheese pull later. 🧀

🚨 Sourdough Troubleshooting
My dough is spreading everywhere.
It may need more fermentation strength, better shaping or more time during bulk fermentation. Don't automatically add flour.
My loaf didn't rise much.
Check your starter first. A weak starter can make an otherwise well-made dough struggle to rise.
My cheese leaked out.
That's not necessarily a failure. Melted cheese escaping through the crust is basically a reward. Try keeping very large cheese pieces away from the outside surface of the loaf.
My crumb is gummy.
The most common culprit is cutting the loaf too soon. Allow it to cool completely before slicing.
My bread isn't sour enough.
Try extending the cold fermentation toward 12–16 hours. A longer refrigerator ferment generally develops more sourdough flavor.
