🍇🍞 Cinnamon Raisin Sourdough Bread

Like a bakery cinnamon roll and an artisan sourdough loaf had a delicious baby.

You'll Need:

✅ 100g active sourdough starter

✅ 400g warm water

✅ 500g bread flour

✅ 10g sea salt

✅ 150g raisins

✅ 2 tbsp cinnamon

✅ 50g brown sugar

Quick Method:

1️⃣ Mix starter and warm water until cloudy.

2️⃣ Add flour and salt. Mix until no dry flour remains.

3️⃣ Cover and rest for 30 minutes.

4️⃣ Do 4 sets of stretch-and-folds every 30 minutes.

5️⃣ During the first fold, add the raisins.

6️⃣ After the final fold, gently flatten the dough into a rectangle.

7️⃣ Sprinkle evenly with the cinnamon and brown sugar mixture.

8️⃣ Fold the dough over itself several times to create cinnamon swirls.

9️⃣ Shape into a tight round loaf.

🔟 Place in a floured banneton or bowl, cover, and refrigerate overnight.

Bake:

🔥 Preheat oven to 450°F (232°C)

🔥 Preheat Dutch oven for 30 minutes

🔥 Score the loaf.

🔥 Bake:

  • 28 minutes covered
  • 10–12 minutes uncovered

🔥 Cool before slicing.

Baker's Warning:

Your house will smell so good that someone will ask:

"Is that a cinnamon bun?"

And honestly... they're not completely wrong. 😆🍇🍞
