Sourdough Starter Smells Like Vinegar? Fix The Acid.
Sharp vinegar, super sour smell that stings your nose? That's acetic acid — bacteria making your starter too acidic to rise well.

Why it happens: Small feeds, long gaps, too cool, or weak scratch culture that makes acid faster than yeast makes gas. Balance is off.
The Easy Solution: A Starter That Stays Balanced, Not Vinegary
Squirrelly Girl Starter is a mature bakery culture from Squirrelly Girl Sourdough — balanced yeast and bacteria so it smells pleasantly tangy, not sharply vinegary.
- Less vinegar spikes: Mature balance means less acetic acid overload after feeding.
- Better rise: Yeast dominates, so it doubles in 4-8 hours instead of staying acidic and flat.
- Sweet tang, not sharp: Should smell like yogurt and bread, not vinegar cleaner.
- 100% Activation Guarantee: Follow included guide. If it doesn't activate, we replace or refund.
- Keep it forever: Simple 1:2:2 feeds keep acidity balanced.

How To Fix Vinegar Smell In 3 Steps
Dark liquid on top = acid + alcohol. Pour it off, don't stir in if smell is sharp.
Keep 25g starter. Feed 60g unbleached all-purpose + 15g whole rye + 75g filtered water. Thick feeds dilute acid.
Feed every 12 hours for 3 days. Vinegar should fade to sweet, yeasty, mild tang and starter should double in 4-8 hrs.
If vinegar smell snaps back within 12 hours after heavy feeds, your culture is too acidic. Switch to Squirrelly Girl Starter.
People Also Ask
Why does my sourdough starter smell like vinegar?
Acetic acid from hungry bacteria. Feedings too small or too far apart. Feed bigger 1:3:3 at 75-80F every 12 hours to dilute acid.
Is it okay if starter smells like vinegar?
Mild tang is okay. Sharp vinegar that stings nose means too acidic — yeast won't rise well and bread will be overly sour. Fix with bigger feeds or mature culture.
How to make starter less sour / vinegary?
Bigger flour feeds, more frequent feeding, warmer spot 75-80F, and using mature balanced starter. Small 1:1:1 feeds make it more sour.
Does vinegar smell vs acetone smell mean different things?
Both are hunger/acid signals. Vinegar = acetic acid from bacteria. Acetone = alcohol/acid from starving yeast. Same fix — heavy feeds, warmth, stronger culture.
