Bottom line: Not active = not ready to bake. You can keep nursing it for weeks — or start with one that's already active.
The Easy Solution: A Starter That's Active From Day One
Squirrelly Girl Starter is a mature bakery culture from Squirrelly Girl Sourdough — dried while strong and active, so it wakes up active, not sluggish.
- Active culture: Real bakery yeast that doubles in 4-8 hours when fed — not 12-24 hours.
- Skips weak phase: No 2-3 week sluggish stage that most scratch starters go through.
- More bubbles, more lift: Holds structure and traps gas instead of staying flat.
- 100% Activation Guarantee: Follow included guide. If it doesn't activate, we replace or refund.
- Keep it forever: Once active, simple feeds keep it active indefinitely.

How To Make Sluggish Starter Active
Keep 20g starter. Feed 40g unbleached all-purpose + 20g whole rye + 55g filtered water. Thick like peanut butter.
Top of fridge, oven light on (door cracked, thermometer inside), or seedling mat. Cold = sluggish.
Feed every 12 hours. Should start doubling in 4-8 hrs by day 3. If still sluggish after 14 days, replace.
If after 3-4 days of thick feeds it still won't double in 8 hours, it's too weak. Switch to Squirrelly Girl Starter.
People Also Ask
Why is my sourdough starter not active after feeding?
Too cold, weak flour, chlorinated water, or immature culture. Use warm spot 75-80F, unbleached flour with rye, filtered water, and 1:2:2 feeds every 12 hours. If no double after 14 days, replace.
How do I know if my starter is active enough?
Active starter doubles in 4-8 hours at 75-80F, domes on top, lots of bubbles, sweet yeasty smell. If it takes 12+ hours or never doubles, it's not active enough to bake.
What is sluggish sourdough starter?
Sluggish means slow — bubbles a little but takes 12-24 hours to rise or never doubles. Weak yeast, too cold, or too acidic from missed feeds.
Can sluggish starter make bread?
Not well. It won't lift dough, bread will be dense and overly sour. Make it active first (doubles in 4-8 hrs) or use mature active culture like Squirrelly Girl Starter.
