Sourdough Starter Troubleshooting
Why Is My Sourdough Starter Not Bubbling?
Is It Dead or Just Lazy? π
Your starter is sitting there looking completely unimpressed while you stare at it wondering why everyone else's jar looks like a science experiment.
You fed your sourdough starter.
You waited.
You checked the jar.
You checked it again.
And then you checked it one more time because surely something must have happened while you weren't looking.
Nothing.
"Why aren't you bubbling?"
You start wondering if your starter is dead.
Before you throw it away and dramatically announce that sourdough simply isn't for you...
STOP. π
Your starter may not be dead at all.
It may simply be slow, hungry, cold, recently disturbed, or not producing obvious surface bubbles yet.
THE LAZY STARTER THEORY
You: "Why aren't you bubbling?"
Starter: "I'm thinking about it."
You: "You've been thinking for six hours."
Starter: "And?"

Why Isn't My Sourdough Starter Bubbling?
There are several reasons a sourdough starter may not show obvious bubbles.
The most common include temperature, feeding schedule, flour, hydration, starter strength, and timing.
A starter can also be fermenting without producing a dramatic layer of bubbles across the surface.
No bubbles does NOT automatically mean dead starter.

1. Your Starter Might Be Too Cold
Temperature has a major effect on fermentation speed.
If your kitchen is cool, your starter may simply be fermenting more slowly.
That means fewer visible bubbles and a much longer wait before you see obvious activity.

"I'll get to it eventually."
If your starter is otherwise healthy, simply giving it a warmer, stable environment may make a noticeable difference.
2. Your Starter May Need More Food
Sourdough starter is a living culture that needs food to keep fermenting.
If your starter has been sitting for a long time after feeding, it may have already used much of the available food.
A hungry starter may become sluggish and produce less obvious activity.
"You said you were feeding me." π
3. You Might Be Checking at the Wrong Time
This one catches a lot of bakers.
Your starter doesn't necessarily bubble dramatically from the moment you feed it until the moment you bake with it.
It may rise, become active, reach a peak, and then begin falling again.
If you check before activity gets goingβor long after the starter has peakedβyou may miss the most obvious signs.
You missed the party. π
4. Your Starter May Be Too Thick
A very thick starter can make bubbles harder to see.
Fermentation can still be happening even when the surface doesn't look like a bubble convention.
Instead of looking only at the top, look for other signs of activity, including expansion, texture changes, and bubbles throughout the starter.
5. The Flour You're Using Can Change What You See
Different flours absorb water differently and can produce different textures and appearances in your starter.
Some starters may show dramatic surface bubbles while others look relatively calm but are still fermenting.
Don't judge your starter entirely by whether it looks like the bubbly jars you see online.

Is My Sourdough Starter Actually Dead?
Don't decide your starter's fate based on one quiet feeding.
A starter can become sluggish for many reasons and may recover with consistent feeding and suitable conditions.
Look for the bigger picture: smell, texture, bubbles throughout the mixture, changes in volume, and how it responds after feeding.
One boring day does not equal a dead starter.

How to Get Your Sourdough Starter Active Again
If your starter is sluggish, don't panic. Start by giving it the basics it needs.
Give your starter a fresh source of food.
A manageable consistency makes activity easier to observe.
Avoid extremely cold conditions if you're trying to encourage activity.
A sluggish starter may simply need longer to ferment.
Mark the level of your starter after feeding so you can see even small changes.
Here's a Trick That Will Save Your Sanity
Put a rubber band, piece of tape, or washable marker line around the jar at the level of your starter immediately after feeding.
Then watch what happens.
This gives you a much better idea of whether your starter is actually rising than simply staring at the surface waiting for bubbles.

Look for These Signs of Activity
Activity isn't always obvious on the surface.
Even a modest rise can tell you something is happening.
Fermenting starter may become lighter, aerated, or more elastic.
Fermentation creates characteristic sour, yeasty, and sometimes fruity or alcoholic aromas.
When Should You Actually Worry?
A starter that isn't bubbling is not automatically unsafe or dead.
However, visible contamination is a different matter.
Visible mold is a serious warning sign.
Unexpected colors or growth should not be treated as normal fermentation.
A rotten or putrid smell is different from the normal aromas associated with sourdough fermentation.
So... Is Your Starter Dead?
Probably not.
A starter that isn't bubbling may simply need the right combination of food, temperature, hydration, timing, and patience.
Don't panic.
Don't throw it out.
And definitely don't yell at the jar. π
Give your starter the conditions it needs and give it a little time. π₯
