Sourdough Banana Bread

Got overripe bananas and extra sourdough starter? This Sourdough Banana Bread is the answer. Moist, flavorful, and incredibly easy to make, it combines the natural sweetness of ripe bananas with the subtle tang of sourdough discard. Perfect for breakfast, afternoon coffee, or a late-night snack, this loaf is one of the best ways to put extra starter to delicious use.
Ingredients
Batter
✅ 1 cup (240g) sourdough discard
✅ 3 ripe bananas, mashed
✅ 2 eggs
✅ ½ cup melted butter
✅ ¾ cup brown sugar
✅ 1 tsp vanilla extract
✅ 1½ cups all-purpose flour
✅ 1 tsp baking soda
✅ ½ tsp salt
✅ 1 tsp cinnamon
Optional Add-Ins
✅ ½ cup chopped walnuts
✅ ½ cup chocolate chips
Instructions
Step 1: Preheat
Preheat oven to 350°F (175°C).
Grease or line a standard loaf pan.
Step 2: Mix the Wet Ingredients
In a large bowl, combine:
- Mashed bananas
- Sourdough discard
- Eggs
- Melted butter
- Brown sugar
- Vanilla
Mix until smooth.
Step 3: Add the Dry Ingredients
Add:
- Flour
- Baking soda
- Salt
- Cinnamon
Mix just until combined.
Fold in walnuts or chocolate chips if using.
Step 4: Bake
Pour batter into the prepared loaf pan.
Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
Step 5: Cool
Allow to cool in the pan for 15 minutes.
Transfer to a wire rack and cool completely.
(Or slice it warm and pretend nobody saw.)
Baker's Tip
The blacker the bananas, the better the flavor. Those ugly bananas sitting on the counter are actually banana bread gold.
Baker's Warning
You will tell yourself:
"I'm only cutting a small slice."
Then you'll cut another one for quality control.
Then another one because the first two were uneven. 😆
